Caveman Crunch Cereal!

Well, at 11 am I take my o-chem cumulative final. AHH I’M SO READY AND SO EXCITED TO ALMOST BE FINISHED WITH CHEMISTRY FOREVER!!!!!!!!

…..sorry……

Let’s get to the recipe shall we?

This was totally inspired by my mom– she wanted to try some of Steve’s Original Krunch cereal, but didn’t want to pay for shipping and all that. SO in my free time from studying, I decided to try to make a “paleo-friendly” cereal.

UMM Let’s just say it turned out to be a HUGE success!!!

Caveman Crunch Cereal

Ingredients:
1/2 cup melted coconut oil
1/2 cup raw honey
1 tbsp vanilla extract
1/2 cup crumbled pecans and hazlenuts (you can choose whatever nut you want though)
1/2 cup sunflower seeds
1 cup almond meal
2 cups slivered almond pieces
1 cup shredded, unsweetened coconut

Instructions:
1. Preheat oven to 325* F
2. Mix dry ingredients in a bowl.
3. Mix all wet ingredients in a large bowl and pour dry into wet slowly.
4. Line a baking sheet with foil and spray with nonstick spray.
5. Pour mixture onto sheet and pat down flat.
6. Bake in oven for about 10 minutes, take it out and shake it around a bit.
7. Put it back in the oven for another 5-10 minutes, or until it’s brown and toasty
8. Cool and store in an air-tight container!
9. Try not to devour it all in one sitting.

It tastes nutty, delicious, and has a great crunchy texture! Big chunks sometimes form from the coconut oil, so you may have to hand crumble it. Feel free to experiment with other variations of nuts and seeds, or add in cinnamon or other seasonings. It’s amazing with almond milk and is guaranteed to make your kitchen have a smell that Willy Wonka himself would be jealous of.

Random bullet point updates:

  • After my test, we’re going out to dinner at Whole Foods to celebrate! Since the stress from this class has unfortunately caused me to lose some weight, I’m thinking my dinner is gonna include a LEGIT pint of ice cream haha NO SHAME! :D
  • For the first time in 10 weeks, I won’t be studying this weekend!
  • I have a buttload of organizing and packing to do since I move down to Corpus Christi next weekend. I can’t believe it’s already here! And I have to buy a washer and dryer from a local discount store and somehow fit it in my already monsoon-like room. I’m SO excited, but not so much for cramming my junk into boxes…
  • After being inspired by the Olympics, my dad and I are going to a track this weekend to time ourselves for 100m sprints haha
  • I still want to find a legit trainer when I move– more on that in a future post
  • and the biggest news….I’M ADOPTING A CAT!!! :D

I really wanted a companion in my apartment with me when I move, and I just couldn’t fathom leaving a dog alone while I’m at class, so my parents are letting me get a cat at a local shelter! I can’t wait to see them all and pick out a winner!!! I already have a name chosen…but we’ll keep that a surprise when I introduce him to you ;)

What’s your all-time favorite cereal? As a kid, mine was Corn Flakes or Life (I guess I was a health freak then too haha), but now I think I’d have to go with Trader Joe’s fiber cereal…even though I’ve only had it a few times

  1. OMG it’s like granola! But with no grains! My mind is officially bogged that you did that lol. I so need to try this, I bet it tastes awesome! and CONGRATS ON BEING DONE WITH OCHEM SOON! Whole Foods celebration is a must, and if you don’t feel like eating an entire PINT of ice cream, totes get a large gelato….I had WF gelato with lunch on wednesday and it was awesome, first I sampled every single flavor and then I got a combo of 3 flavors….I forced them to be my own personal self-serve froyo -type establishment bahaha. I’m moving in a week too so I’m right there with ya on the packing front – no fun!

  2. Winner winner ice cream for dinner…enjoy it!!! Good luck for your test- I’m so excited for you to have a breather of a weekend! Great recipe too- my favorite growing up was cinnamon toast crunch..still love it but I need to mix it with some bran flakes, otherwise it’s a tad too sweet for me!

Eat that ice cream in honor of your beastliness. :) I can’t imagine what you’re going to name your cat, but I can only say it’ll probably be something totally awesome. ;) My favorite cereal now is Kashi but back then you could not keep me away from the Cap’n Crunch!

  4. This looks so good! Like an oatless granola or something! :D My favourite cereal is Kashi Honey Almond Flax… but I just bought Mini Wheats at the store the other day and I forgot how much I love that cereal too!

  5. That cereal looks to die for!!! As so incredibly healthy!! I am definitely going to have yo whip up a batch! So simple!! Good luck on your exam today!! I know you will do awesome!! Can’t wait to hear about the kitty details…and the trainer info???!! Enjoy some of that ice cream for me today too! Wish my stomach could handle it! I am losing weight like crazy from this thing, so maybe a dinner trip to whole foods with ice cream will be in my near future too!! Great suggestion! :)

  10. Oh my gosh, e-mailing a link to this recipe to my primal friend–he always complains about being bored with eggs and bacon for breakfast. Clearly there ARE other primal breakfast options!

    And cheerios was my favorite all through childhood, then grapenuts, now shredded wheat. Man, I have weird boring taste in cereal ;D

  13. Girl, I just knoow you’ve been working SO hard at conquering O-chem, & it’ll be a weight lifted from you once you have aced your test. You have truly earned some well deserved R&R, many pints of ice cream and to keep yourself strong & healthy.

  18. Let me just first say, congratulations on making it through and doing well at that! Seriously amazing stuff right there, organic chemistry is freakin NO JOKE as you may or may not know ;)
    That granola/cereal certainly looks like a winna winna chicken dinna! Haha. I have most of the ingredients for it too, well I just need some more nuts, but that gives me an excuse to go to Whole Foods, whenever I get the chance I go! Muahaha. On that note, I hope you enjoyed your time there and did indeed eat a whole pint of ice cream!
    YAYY for a kitty! Ahh I cannot wait to see what kind you get, what he/she looks like and just how wonderful you are getting one :) I know it will be a great addition to your family and really help you/give you company while at school! :D Enjoy the rest of your weekend!

  21. Whole Foods is the best way to celebrate anything! Enjoy that ice cream–I just shared a pint of chocolate hazelnut coconut milk ice cream with my dad over the past few nights and I couldn’t get enough!

    My favorite cereal for sure is PB Puffins! It’s the only cereal I have to have!

  22. Ha ha, “Caveman Crunch” – I can see it on the shelves, you should go into business! I don’t think I could make this as it wouldn’t be safe, I could see myself eating the lot on one go… :-)
